Leek Soup Recipe
Leek Soup has a smooth taste. The chicken broth adds a taste to Leek Soup. Leek soup is an easy to prepare dish.
Ingredients
2 tsp butter
3 leeks, minced
1 small onion, minced
2 potatoes, peeled, diced
1 celery stalk, minced
2 cups chicken broth
Salt and pepper
2 cups milk
Parsley, chives or fresh basil, chopped
Directions
In a saucepan, melt butter.
Lightly cook vegetables.
Add chicken broth.
Season to taste with salt and pepper.
Bring to a boil.
Cover.
Over low heat, simmer 15 minutes or until vegetables are tender.
Meanwhile, in a small saucepan, heat milk without boiling.
Set aside.
With a pestle, mash vegetables.
Fold in warm milk.
Simmer 10-15 minutes.
Sprinkle with chopped parsley.
