 Leeks6 Ounce
 Vegetable oil3 Teaspoon
 Vegetable stock1 Pint
 Red lentils4 Ounce
 Sea salt1 To taste
 Bouquet Garni - (it is a bunch of herbs, so you can use whatever is available OR buy from health food shops)
 Yeast1 Teaspoon

Directions

MAKING
1. Take a heavy bottom pan put oil and cook the leeks on low heat, stirring frequently.
2. Add lentils, stock, sea salt, bouquet garni and simmer untill lentils are soft.
3.Puree the soup and discard the bouquet garni.
4. Add a little yeast extraxt for extra flavour.

SERVING
5. Serve hot in soup bowls.
