Lecso With Sausages Recipe

Ingredients
10 large green peppers, about 5 pounds
4 cloves garlic, minced
1/4 cup Hungarian sweet paprika
8 large ripe tomatoes, about 5 pounds
1 tablespoon caraway seeds
Salt to taste
8 tablespoons drippings from nitrite free bacon .
2 pounds spicy sausage , cut in 1/8 inch tnick slices
4 large onions, chopped
Directions
Core and seed peppers and cut into rings.
Dip tomatoes in boiling water or hold over flame to loosen skin; peel and cut in chunks.
Saute onions and garlic in bacon drippings until soft, about 10 minutes.
Add paprika and stir well.
Stir in peppers, tomatoes and salt, if desired.
Simmer, covered, about 30 minutes, until peppers are very tender.
Meanwhile, brown the sausages and add to lecso.
NOTE TO COOK: Prepare lecso at home and carry to party in cooking pot.
