Lechon De Mechar Recipe
Ingredients
| 1 beef eye round | ||
| Stuffing | ||
| Lard | 1/4 Cup (16 tbs) | |
| Water | 4 Cup (16 tbs) | |
| Salt | 1 Tablespoon | |
| 1 sweet chili pepper, seeded | ||
| Coriander/ cilantro leaves | 3 | |
| Ham | 2 Ounce | |
| 1/2 green pepper, seeded | ||
| Onion | 1 Medium | |
| 1 1/2 pounds raw potatoes, pared and diced | ||
| 2 tablespoons achiote lard or oil | ||
| Tomato | 1 , chopped | |
| Tomato sauce | 1/2 Cup (16 tbs) | |
Directions
With a sharp knife make a deep cut in meat from both ends to the center.
Stuff meat and skewer or sew opening closed.
Melt lard in a large heavy kettle.
When hot, add meat and brown on all sides over high heat about 10 minutes.
Add water and salt.
Chop coarsely next 5 ingredients and add.
Cover kettle and cook over moderate heat for 2 1/2 hours.
Add remaining ingredients, and continue to cook, uncovered, for 45 minutes longer, or until sauce begins to thicken.
