Lebkuchen Recipe

Ingredients
1 cup whole wheat flour
3/4 cup unbleached flour
1/4 cup plus 2 tablespoons brown sugar
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon dried grated orange rind
1/4 cup plus 2 tablespoons honey
3 tablespoons plus 2 teaspoons orange juice
1/4 cup finely chopped almonds
1/3 cup finely chopped mixed dried fruit
Directions
1. In a large bowl, combine the flours, brown sugar, baking soda, spices, and orange rind, and stir to mix well. Add the honey and orange juice, and stir to mix well. Add the almonds and dried fruit, and stir to mix.
2. Coat a baking sheet with nonstick cooking spray. Roll the dough into 1-inch balls, and place 1 1/2 inches apart on the baking sheet. Using the bottom of a glass dipped in sugar, flatten the cookies to 1/4-inch thickness.
3. Bake at 275 °F for about 18 minutes, or until golden brown. Cool the cookies on the pan for 1 minute. Then transfer the cookies to wire racks, and cool completely.
