 Cucumbers2 , peeled

 Red onion1
 Lemon juice1/4 , squeezed
 Extra virgin olive oil2 Tablespoon
 Garlic1 Clove (5gm), minced
 Spearmint -€“ 3 tbsp, fresh, chopped or Mint leaves -€“ 1 tbsp, dried
 Black olives -€“ ½ cup, Kalamata or oil-cured, pitted, sliced
 Feta cheese1 Cup (16 tbs), crumbled
 Salt To Taste
 Black pepper1 To taste

Directions

MAKING
1. Take a salad bowl, add all the ingredients, season with salt and pepper, and toss thoroughly.
2. Allow the salad to chill for at least 3 hours for the flavors to blend.

SERVING
3. Serve in chilled salad plates lined with raw grapes, lettuce, cabbage leaves, or tacos.
