Lebanese Hamburgers Recipe

Melt 6 tablespoons of the butter in a wide frying pan over low heat.
Add onions and cook, stirring often, until pale golden and very soft (about 40 minutes); stir in half the spice mixture after 20 minutes.
Transfer cooked onions to a heatproof dish and place in a 300° oven.
Melt remaining 2 tablespoons butter in frying pan over medium heat; add tomatoes.
Cook for 1 to 2 minutes on each side.
Distribute tomatoes and any juices over onions; return to oven.
Prepare Yogurt Sauce; cover and refrigerate.
In a bowl, blend remaining spice mixture with beef and water; then shape into 12 patties, each about 4 inches in diameter.
Place patties on a lightly greased grill 4 to 6 inches above a solid bed of hot coals.
Cook, turning once, until done to your liking; cut to test .
When you turn patties, arrange buns, cut side down, around outside of grill to toast.
