Lean Lasagna Recipe
Ingredients
1/2 (1-pound) package raw ground turkey
1 (15-ounce) can tomato sauce with tomato bits
3 (8-ounce) cans no-salt-added tomato sauce
1/3 cup chopped green pepper
1/3 cup chopped onion
1 clove garlic, crushed
1 bay leaf
1 1/4 teaspoons Italian seasoning
1/2 teaspoon dried whole oregano
1/4 teaspoon fennel seeds
1/8 teaspoon red pepper
Dash of ground nutmeg
1 (12-ounce) carton 1% low-fat cottage cheese
1 (10-ounce) package frozen chopped spinach, thawed and pressed dry
2 tablespoons grated Parmesan cheese
Vegetable cooking spray
18 wonton wrappers
1 cup (4 ounces) shredded part-skim mozzarella cheese
Directions
Cook turkey in skillet over medium heat until brown, drain well on paper towels.
Combine turkey, tomato sauce, green pepper, onion, and seasonings in a large saucepan, cover and cook over low heat 30 minutes, stirring occasionally.
Remove bay leaf from sauce.
Combine cottage cheese, spinach, and Parmesan cheese, set aside.
Coat a 12 x 8 x 2-inch baking dish with cooking spray.
Spoon 1 cup turkey sauce into baking dish.
Top with 6 wonton wrappers laid in a single layer, 1 cup spinach mixture, and 1 1/2 cups turkey sauce.
Repeat layers twice, ending with sauce mixture.
Bake at 350° for 40 minutes or until thoroughly heated.
Remove from oven, top with mozzarella cheese, and bake an additional 5 minutes.
