Ingredients

 Lean Top Round - 8 ounces
 Mustard - 1 tablespoon, coarse
 Chicory4 Cup (16 tbs)
 Green beans2 Cup (16 tbs), sliced
 Sweet red pepper1 , julienned
 Scallions1 , minced
 Red wine vinegar3 Tablespoon
 Olive oil2 Tablespoon
 Beef Stock1 Tablespoon
 Dried oregano1 Teaspoon
 Feta cheese1 Tablespoon, crumbled

Directions

MAKING
1) Rub mustard all over the beef.
2) Grill or broil the beef for about 7 minutes on each side to cook it to medium-rare perfection. If broiling, place the beef about 5 inches from the source of heat.
3) Once cooked, allow the beef to sit for a while before slicing it.
4) In a large salad bowl, add in the chicory, green beans, red peppers and scallions.
5) In a smaller bowl, combine the red wine vinegar, olive oil, stock and oregano. Mix well.
6) Pour the dressing over the vegetable salad. Toss well.

SERVING
7) Serve the salad on individual plates. Layer the beef slices over the greens.
8) Sprinkle crumbled feta cheese on top of each.
