Directions

Cut the hard stems from the beet leaves.
Wash the leaves under cold running water.
Place the butter in a microwave-safe bowl and microwave 30 seconds at HIGH.
Add the grated lemon or lime rind and the sugar.
Stir to mix.
Add the beet leaves, stir well.
Cover and microwave 3 minutes at HIGH.
Stir well, salt and pepper to taste.
