Leaf Artichokes with Mayonnaise Recipe
Ingredients
| Lemon juice | 2 Tablespoon (Salad or olive oil - 1/4 cup) | |
| Garlic | 1 Clove (5gm) (Salad or olive oil - 1/4 cup) | |
| Salt | 1 Teaspoon (Salad or olive oil - 1/4 cup) | |
| Ground pepper | 1 Dash (Salad or olive oil - 1/4 cup) | |
| Artichokes | 4 Large (Salad or olive oil - 1/4 cup) | |
| Tarragon Sauce | ||
| Mayonnaise or cooked salad dressing - 1 cup | ||
| Lemon juice | 2 Tablespoon (Salad or olive oil - 1/4 cup) | |
| Tarragon leaves | 1/2 Teaspoon, dried (Salad or olive oil - 1/4 cup) | |
Directions
MAKING
1. In large kettle, combine 6 quarts water with the oil, 2 tablespoons lemon juice, garlic, salt and pepper.
2. Place the kettle over heat. Boil.
3. Trim stalk from base of artichokes to get 1 inch slices.
4. Snip off spike ends and remove discolored leaves.
5. Wash artichokes in cold water, and drain.
6. Using twine, tie each artichoke around, to hold leaves in place.
7. Add to the boiling water mixture.
8. Reduce heat and simmer for 40 minutes till the artichokes are soft. Drain water and remove excess liquid.
9. Cool artichokes. Refrigerate till serving time.
10. In small bowl, combine mayonnaise with 2 tablespoons lemon juice and tarragon. Mix well.
11. Refrigerate the tarragon sauce, covered.
12. On a large platter or individual serving dishes place these artichokes. Top each one with a mushroom cap.
