Lazy Sunday Omelette Recipe Video
There are numerous ingredients you can add to an omelette, and I love dumping leftover veggies, and cheese into my omelettes. It makes a perfect impromptu meal, requires very little planning and can be whipped up very quickly for whenever hunger strikes!

3 eggs
1/2 red bell pepper (finely chopped)
1/4 red onion (finely chopped)
handful of sliced baby bella mushrooms
1/4 cup shredded cheddar cheese
2 green chillies (finely chopped)
1 tsp butter
Splash of milk
salt to taste
pepper-as many grinds as you like
Directions
In a large bowl, break the eggs and whisk it with a splash of milk. The milk will make the omelette fluffy.
Add the red onions, bell peppers, mushrooms and chilies and season it with some salt and pepper.
Preheat a small frying pan, and add a tsp of butter to it.
Once the butter melts add half the egg mixture to the pan and let it cook for a few minutes.
Once the omelette starts setting on the sides, swirl the pan around and make sure it comes together well.
Fold the omelette over and cook it briefly for a minute.
Slide it onto a plate, and get ready to dig in.
