Layered Reuben Salad Recipe

Ingredients
2 cups finely shredded cabbage
2 cups finely shredded lettuce
1 8 ounce bottle Thousand Island salad dressing
1 teaspoon caraway seed
2 3 ounce packages sliced corn beef, chopped
3 hard cooked eggs, sliced
1 cup shredded Swiss cheese (4 ounces)
4 slices melba toast, coarsely crushed
Directions
In a mixing bowl combine cabbage, lettuce, 1/4 cup of the Thousand Island salad dressing, and caraway seed.
In the bottom of a medium bowl or an 8x8x2 inch dish place half of the cabbage mixture.
Layer in the following order: half of the corned beef, remaining cabbage mixture, remaining corned beef, hard-cooked egg slices, and cheese.
Spread remaining Thousand Island salad dressing evenly over top of salad.
Cover tightly with clear plastic wrap.
Chill up to 24 hours.
Before serving, top with crushed melba toast.
