Layered Plum Crunch Recipe

Ingredients
1 cup unsweetened apple juice
1 1/2 tablespoons cornstarch
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground ginger
3 cups peeled, sliced fresh red plums
1/4 cup crushed gingersnaps
1/4 cup quick-cooking oats, uncooked
1 tablespoon margarine, softened
Directions
Combine apple juice, cornstarch, lemon juice, cinnamon, and ginger in a medium saucepan, cook over medium heat, stirring constantly, until mixture is clear and thickened.
Stir in plums.
Spoon plum mixture into individual dessert dishes, chill thoroughly.
Combine crushed gingersnaps, oats, and margarine; stir until well mixed.
Spread mixture in a baking pan; bake at 350° for 15 minutes or until crumb mixture is browned and crisp, stirring occasionally.
Sprinkle crumb mixture over top of chilled plum mixture, and serve immediately.
