Layered Tomato and Cottage Cheese Salad Recipe
Ingredients
| Cottage cheese | 2 Cup (16 tbs) | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Green onion | 1 , chopped | |
| Stuffed olives | 6 , chopped | |
| Tomatoes | 6 Large | |
| Lettuce | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1. In a bowl, blend together cottage cheese, mayonnaise, green onion, and olives, whisking with a small wire whisk
2. Season with salt and pepper.
3. Cut a thin slice from stem ends of tomatoes.
4. Scoop out the seeds and pulp using a teaspoon.
5. Slice each tomato into 3 thick slices.
6. Stack the slices spooning the cheese mayo between each layer.
7. Chill well.
SERVING
8. Serve over a bed of lettuce if you like.
