I love vegetables and hence anything with vegetables in it is just awesome to me and so is this Layered Root Vegetable Stew. I do love the flavor of Layered Root Vegetable Stew and it is not only because of the vegetables but the overall flavor. You will agree it is good!

1 piece wakame (sea vegetable), soaked and diced
 
1 cup (240 ml) spring water
 
1 onion, cut in segments
 
2 tbs (30 ml) tamari
 
1 turnip, cut in segments
 
1 small rutabaga, cut in small pieces
 
1 daikon radish, cut on a diagonal
 
1 scallion, thinly sliced
 
1 carrot, sliced
 
1 piece burdock, thinly sliced
 
1 lotus root, thinly sliced

Directions

In a pot, place water and wakame.
Turn up flame until water boils, reduce to medium flame.
Begin by layering onions over wakame.
Sprinkle a little tamari on onions and then layer turnip.
Sprinkle a little tamari on turnips and continue to sprinkle and layer rest of the roots in the order they are listed.
Cover the pot and simmer for 50 minutes.
Gently stir and serve over rice or as a side dish.
