Ingredients

 1 4-serving envelope low-calorie lemon- or raspberry-flavored gelatin
 Boiling water3/4 Cup (16 tbs)
 Cold water3/4 Cup (16 tbs)
 Peach juice1 16 Ounce, drained
 Evaporated milk1/4 Cup (16 tbs), skimmed
 Few drops almond extract

Directions

Dissolve gelatin in boiling water.
Stir in cold water.
Add 1 cup of the gelatin mixture to peaches; chill till partially set.
Chill remaining gelatin till partially set (consistency of unbeaten egg whites).
Add evaporated skimmed milk and almond extract to partially set gelatin without peaches.
Beat till fluffy.
In 6 parfait glasses layer the two gelatin mixtures, ending with whipped gelatin.
Chill thoroughly before serving.
