Latvian Pancakes Recipe
Ingredients
1 beef brisket
2 quarts cold water
3 carrots
Parsley
Stalk of celery with leaves
Salt to taste
5 peppercorns
1 bay leaf
Directions
Slowly cook beef brisket in 2 quarts cold water, with carrots, parsley, celery, salt, peppercorns and bay leaf.
When meat is tender remove from heat.
Keep liquid and meat in refrigerator overnight.
The next day take out meat, grind it up to make 2 1/2 cups.
