Latkes Recipe

Ingredients
3 large potatoes
1 large onion
3 eggs
Salt to taste
2 tablespoons wheat germ
1 teaspoon unbleached white flour
Vegetable oil
Sour cream
Directions
1. Grate the potatoes on a flat stainless steel grater. Grate the onion on a fine grater and add to the potatoes. Mix with the eggs. Alternately, the potatoes, onion, and eggs may be blended in an electric blender if divided into three batches.
2. Add salt, wheat germ, and flour to the potato mixture. Set aside while heating the oil. Add enough oil to just cover the bottom of a large, heavy skillet and heat.
3. Ladle the potato mixture by the tablespoon into the hot fan. Lower the heat slightly and fry quickly until browned; turn and brown other side. Drain on paper towels.
