Lasagna Surprise Recipe
Ingredients
| Onion | 3/4 Cup (16 tbs), chopped | |
| Garlic | 2 Clove (5gm), finely chopped | |
| Vegetable oil | 2 Tablespoon | |
| 2 (26-ounce) jars prepared spaghetti/pasta sauce or prepare about 2 quarts of your own tomato-based spaghetti/ lasagna sauce recipe (add ground meat or sausage, if desired) | ||
| Cottage cheese ricotta | 1 Can (10oz) | |
| Frozen chopped spinach package | 1 , thawed | |
| Mozzarella cheese | 1 pound, shredded | |
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| Eggs | 2 | |
| Lasagna noodles package | 1 | |
Directions
In a large pan, cook onion and garlic in oil.
Add prepared pasta sauce.
Simmer 15 minutes.
In bowl, mix ricotta, spinach, and 1 cup mozzarella, all the Parmesan, and eggs.
In 15x9-inch baking dish (or smaller dishes as needed), layer 2 cups sauce, half the lasagna, half the remaining sauce, all the spinach mixture, half the mozzarella, remaining lasagna and sauce.
Cover, bake at 350 degrees for 45 minutes or until hot.
Uncover, top with remaining mozzarella.
Bake 15 minutes.
Let stand 15 minutes before serving.
