 Olive oil45 Milliliter (Sauce:)
 Garlic1 Clove (5gm), minced (Sauce:)
 1 fi nely diced medium onion
 2 finely diced celery stalks
 Mushrooms115 Gram, sliced (Sauce:)
 5 ml each of salt, basil leaves
 3 ml each of thyme leaves, oregano leaves, paprika, pepper
 Cayenne pepper1 Milliliter (Sauce:)
 1.3 kg peeled, seeded and chopped tomatoes
 1 Pasta Verde
 Ricotta cheese375 Milliliter (Pasta:)
 Cheddar Cheese375 Milliliter, grated (Pasta:)
 Chives45 Milliliter, chopped (Pasta:)
 Basil leaves5 Milliliter (Pasta:)
 3 ml each of cracked black pepper, salt
 Eggs2 (Pasta:)

Directions

Sauce: In a large sauce pan, heat the oil.
Add the garlic, onion, celery, and mushrooms, saute until tender.
Add the seasonings and tomatoes.
Simmer over low heat for 3 hours or until desired thickness is achieved.
Pasta: Process pasta, cut into lasagna noodles.
In a mixing bowl, blend the cheeses with the seasonings and eggs-Spoon mixture onto noodles and roll in a jelly roll fashion.
Place in a baking dish, cover with sauce and bake in a 375°F (190°C) preheated oven for 30 minutes, covered.
Remove cover and continue to bake for an additional 15 minutes.
Serve.
