Ingredients

 Potatoes - 1 lb [500 g], parboiled for 10 minutes
 Lamb-€™s liver - 1 lb [500 g]
 Large onion - 1, finely chopped
 Flour - 1 tablespoon [1X 20 ml spoon]
 Powdered sage - 1 teaspoon [1X5 ml spoon]
 Stock or water - 1/2 pint [250 ml]
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) In a bowl, add the seasoned flour.
2) Add in the liver and toss till well coated.
3) Arrange half in a greased casserole.
4) Combine the onion and sage and sprinkle half over the liver.
5) Repeat till all is used.
6) Pour in stock or water and cover with overlapping slices of potato.
7) Place in oven for 1 hour at 350°F (180°C), Gas Mark 4.

SERVING
8) Garnish with chopped parsley and serve.
