Lamb With String Beans Recipe

Ingredients
1 pound lean lamb
1 pound string beans
2 tablespoons oil
1 teaspoon salt
1/8 teaspoon pepper
1 cup chicken stock
Thickening:
2 tablespoons cornstarch mixed with 2 teaspoons soy sauce
4 tablespoons water
Directions
Cut the beans into 1 1/2 inch sections and parboil them in boiling water for about 3 minutes or just as they turn bright green.
Drain and run through cold water.
Cut the lamb against the grain into thin slices.
Heat a frying pan with oil and when it is hot add salt and pepper.
Add the lamb and saute over medium heat till it is brown, stirring constantly.
Now add the stock, cover, and when it comes to a boil, simmer for 5 minutes.
Add the beans and leave off the cover.
Add the thickening and cook for 5 minutes, stirring constantly.
Serve on a platter when the sauce is thick and smooth.
