Lamb With Peppers (Agnello Con Peperoni) Recipe
Ingredients
4 lb (2 kg) lean lamb cubed
salt and pepper
1/2 cup flour
1/4 cup (62.5 ml) olive oil
2 cloves garlic, crushed
1 cup (250 ml) dry white wine
1 cup (250 ml) water
2 green peppers, sliced
2 red peppers, sliced
1/2 lb (250 g) tomatoes, peeled and chopped
1 bay leaf pinch of oregano
Directions
Toss the meat in the flour seasoned with salt and pepper.
Saute the garlic in the oil for three minutes.
Add the meat and brown well.
Stir in the wine and water.
Add the peppers, tomatoes, bay leaf and oregano.
Cover and cook over a medium heat for about one hour or until meat is tender.
