Directions

MAKING
1. Heat oil. Add bay leaves and pepper.
2. Stir until aromatic. Add lamb shanks and sear on all sides.
3. Add boiling water enough to cover the lamb shanks.
4. Cover and let it simmeron low for 1 1/2 hours.
5. Heat another pan and add sauce ingredients. Bring to a boil.
6. When the lamb is tender, add to the sauce along with some stock and simmer for a few more minutes.

SERVING
7. Serve the braised lamb shanks with fresh greens and crusty bread on the side.
