Lamb Meat Loaf Recipe
Ingredients
1 1/2 lb (750 g) ground lamb
1 1/2 cups (375 mL) rice, cooked
1/2 cup (125 mL) tomato juice
2 eggs, lightly beaten
2 garlic cloves, minced
1 tsp (5 mL) salt
1/2 tsp (2 mL) sugar
1 small onion, chopped fine
2 tbsp (30 mL) chili sauce
4 slices of bacon
Directions
Mix all the ingredients together except the bacon.
Place in an 8 x 4 x 21/2-inch (20 x 10 x 6.25 cm) microwave-safe loaf pan.
Pack down.
Place the bacon slices on top.
Microwave 10 minutes at HIGH.
Microwave another 10 minutes at MEDI-UM.
Let stand 20 minutes.
Cover with waxed paper and place a weight on top.
Refrigerate when cooled.
Place in an 8 x 4 x 21/2-inch (20 x 10 x 6.25 cm) microwave-safe loaf pan.
Pack down.
Place the bacon slices on top.
Microwave 10 minutes at HIGH.
Microwave another 10 minutes at MEDI-UM.
Let stand 20 minutes.

Refrigerate when cooled.
