Directions

Place the chops on to a flat board and make several shallow cuts in the meat on both sides to enable the coating to penetrate better.
Blend the peanut butter with the lemon juice and a very little seasoning.
Spread over both sides of the meat, giving an even coating.
Heat the oil in a pan, add the chops and cook steadily for 3 minutes on either side.
Add the mint and cider or white wine.
Cover the pan and cook for 10 minutes, or until the meat is tender.
Top with the parsley and serve with pasta or rice and a green vegetable or salad.
