Lamb In Peanut Butter Sauce Recipe

| Soy oil/Corn / sunflower oil | 2 Tablespoon | |
| Finely chopped mint | 1 Teaspoon | |
| Sweet cider/White wine | 1⁄4 Pint (150 Milliliter) | |
| Chopped parsley | 2 Tablespoon | |

Directions
Blend the peanut butter with the lemon juice and a very little seasoning.
Spread over both sides of the meat, giving an even coating.
Heat the oil in a pan, add the chops and cook steadily for 3 minutes on either side.
Add the mint and cider or white wine.
Cover the pan and cook for 10 minutes, or until the meat is tender.
Top with the parsley and serve with pasta or rice and a green vegetable or salad.
