Spiced Lamb Curry Recipe
Lamb Curry has a Sole taste. The Onion and coriander gives the Lamb Curry Stimulating taste.
Ingredients
| Dried apricots | 8 Ounce | |
| 2 lb boneless shoulder of lamb | ||
| Butter/Margarine | 4 Tablespoon | |
| Onions | 4 , chopped | |
| Ground coriander | 2 Teaspoon | |
| Cumin | 2 Teaspoon | |
| Ground cinnamon | 1 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Soak apricots in 2 1/2 cups boiling water for 1-2 hours.
Trim fat from meat and cut into 1 inch pieces.
Heat butter or margarine in a heavy pan and saute onions until soft and golden, stirring continuously.
Add the lamb, increase heat and cook until browned all over.
Add spices and cook, stirring for 2-3 minutes.
Add apricots and water in which they were soaked.
Season with salt and pepper.
Cover, bring to the boil slowly and simmer for 1 1/2 hours, or until tender, stirring occasionally.
