Lamb Curry Recipe
How about a great Lamb curry for lunch today? This awesome recipe is well-flavored with spices. The addition of raisins into this curry gives it a nice tinge of sweetness. A highly recommended recipe!!
Ingredients
Lean lamb cubes - 3 cups
Cinnamon - 1 stick
Bay leaves - 2
Butter or margarine - 1/4 cup, melted
Onions - 2, sliced
Green apple - 1 Iarge, peeled and sliced
Flour - 1/4 cup
Curry powder - 1/2 tsp.
Salt - 1/2 tsp.
Pepper - 1/8 tsp.
Juice and grated rind of 1/2 lemon
Raisins - 1/2 cup
Whole cloves - 2
Directions
MAKING
1) In a skillet, add the lamb with 4 cups hot water, cinnamon, and bay leaves.
2) Allow to simmer till the lamb is tender.
3) Discard the cinnamon stick and bay leaves.
4) Remove the lamb and strain and reserve the pan liquid.
5) Add butter into the skillet and heat.
6) Add in the onions and apple.
7) Cook, while stirring, till the onions are tender.
8) Combine the flour, curry powder, salt, and pepper and add into the onion mix.
9) Gradually add in the reserved liquid.
10) Allow to boil.
11) Add in the lemon juice, lemon rind, raisins, cloves, and lamb.
12) Lower the heat and simmer till heated through.
SERVING
13) Serve over hot rice.
