Ingredients
| 2 cups cubed cooked lamb | ||
| Garlic salt | 1/4 Teaspoon | |
| Onion | 1 Medium, thinly sliced | |
| Butter/Margarine | 2 Tablespoon | |
| All purpose flour | 2 Tablespoon | |
| Curry powder | 4 Teaspoon | |
| Ground ginger | 1/2 Teaspoon | |
| Chicken broth | 1 Cup (16 tbs) | |
| 1/4 cup maraschino cherry juice | ||
| Lemon juice | 2 Tablespoon | |
| Apple | 1 Medium, chopped | |
| Flaked coconut | 1/3 Cup (16 tbs) | |
| Golden Raisins | 1/3 Cup (16 tbs) | |
Directions
Sprinkle meat with garlic salt and toss to coat evenly.
Set aside.
Place onion and butter in a 2 qt.glass casserole dish.
Cover and microwave 2 to 3 minutes or until tender.
Stir in flour and spices until smooth.
Gradually stir in chicken broth, cherry and lemon juices.
Microwave 3 to 4 minutes, stirring every minute until thickened.
Add meat, apple, coconut and raisins.
Cover and microwave 5 to 8 minutes, stirring once during cooking.
Set aside.
