Lamb With Millet Recipe

Lamb With Millet is a tenderly prepared recipe with vegetables and beans alongside. Spinach or Swiss chard adds more flavor to Lamb With Millet. Squeezing little lime juice gives a tangy taste to this entire preparation.

Ingredients

 
1 recipe stock from Lamb with Mint (preceding)
 
1 cup millet
 
2/3 cup each lima beans and sliced carrot, celery and onion
 
2 tablespoons butter and/or corn oil
 
2 to 3 cups shredded beet greens, spinach or Swiss chard
 
Salt, black pepper and fresh lime juice to taste

Directions

Prepare the stock as directed, reserving the meat from the lamb blocks.
Brown the millet and vegetables in butter, stirring to coat well.
Add stock, cover, bring to boil, lower heat and cook at gentle boil 30 minutes, or until millet is tender.
Stir in beet greens, bring back to boil and cook 1 to 2 minutes until greens are limp.
Add reserved lamb and adjust seasonings with salt, pepper and lime juice.
