Lamb With Fava Beans Recipe
Ingredients
| 3 pounds shoulder of lamb | ||
| Fresh dill, chopped | ||
| Butter | 3 Tablespoon | |
| Fresh or dried mint | ||
| Onions | 3 , chopped | |
| Fava beans | 3 Pound | |
| Tomato sauce | 1 Cup (16 tbs) | |
| Water | 2 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut lamb into 3 inch cubes.
Melt butter in a saucepan or casserole, add meat and onions, and brown well over moderate heat.
Wash and shell fava beans.
Any tender outer skins may be added with beans to casserole.
Add water, beans, dill, mint, salt and pepper, and tomato sauce, if desired.
Bring mixture to a boil, cover, and simmer for 1 1/2 to 2 hours or until meat is tender, adding more water if needed.
