Lamb With Coriander Recipe

Ingredients

 
500g lamb fillet/cut into thin strips
 
1 tablespoon cornflour
 
1 teaspoon granulated sugar
 
1 teaspoon sesame oil
 
2 tablespoons peanut oil
 
200g broccoli florets, sliced
 
3 dried black winter mushrooms, soaked in hot water for 25 minutes, drained
 
2 spring onions, chopped
 
1 clove garlic, finely chopped
 
2 teaspoons rice wine or dry sherry
 
1 tablespoon dark soy sauce
 
1 tablespoon finely chopped fresh coriander

Directions

Place lamb in a dish.
In a bowl, mix together cornflour (cornstarch), sugar and sesame oil and spoon over the lamb; stir to well coat lamb.
Leave for 30 minutes.
In a wok, heat peanut oil, add lamb and stir fry for 2 minutes.
Remove lamb from wok and keep warm.
Add broccoli, mushrooms, spring onions and garlic and stir fry for about 5 minutes until broccoli is just tender.
Stir in rice wine or dry sherry, soy sauce, lamb and coriander.
Stir over a very high heat for 1 minute.
