Ingredients

 
1 pound lamb sweetbreads
 
1 tablespoon flour
 
2 cups cold water
 
1 tablespoon butter
 
1 pinch mixed herbs
 
3 lemon wedges
 
Salt and pepper

Directions

Put the sweetbreads in a pan of cold water and bring slowly to a boil.
Cook for 10 minutes.
Refresh them in cold water.
Cut away all gristle and membrane.
Add the herbs and seasoning to the flour.
Toss the sweetbreads in this and fry in the butter till lightly browned.
