Lamb Stuffed Zucchini Recipe

3 tbsp butter
8 oz lamb shoulder, diced
1 onion, finely chopped
1/4 tsp cinnamon
Salt and pepper
1/2 cup pine nuts
8 medium size unpeeled zucchini, halved lengthwise
2 cups tomato sauce
Directions
Preheat oven to 325°F (160°C) In a skillet, melt butter.
Lightly brown meat.
Add remaining stuffing ingredients.
Simmer 5 minutes or so.
Set aside.
Scoop out half the flesh from zucchini.
Stuff with lamb mixture.
Place in an ovenproof dish.
Cover with tomato sauce.
Cook in oven 40 minutes.
