2 1/2 pounds Lamb
1/2 large onion
8oz can tomato sauce
Beef stock
salt and pepper
flour
1 tablespoon thyme
2 carrots (diced)
1 large potato (diced)

Directions
Season the meat with salt and pepper, add flour and mix well.
In a pan, heat the oil, add the meat and cook until brown. Stir in the onion, garlic, tomato sauce, mix well and cover with the beef stock. Boil on a medium heat, add thyme; simmer for 1/2 hour. Skim off the fat over the pan.
Stir in the carrots and the potatoes; simmer until the vegetables are just tender. Adjust the seasoning and simmer for further 5 minutes.
