Lamb Shish Kabobs Recipe
Ingredients
| 3/4 lb. lamb shoulder or shank, cut into 1" cubes | ||
| Onion | 1/2 Small, thinly sliced | |
| Oregano | 1/2 Teaspoon | |
| Pineapple chunks | 1/2 Cup (16 tbs) | |
| 1/2 large onion, cut in 1" pieces | ||
| 1 firm tomato, cut in 1" wedges | ||
| Vegetable oil | 1 Tablespoon | |
| 3/4 tsp. salt 1/8 tsp. coarsely ground pepper | ||

Directions
Place lamb cubes in a bowl.
Tuck in onion slices.
Add seasonings.
Refrigerate 1 to 2 hr.
Alternate meat cubes, chunks of pineapple, onion, and tomato on metal skewers.
Roll in vegetable oil.
Broil 3" from heat, about 15 to 20 min.
Turn as meats and vegetables brown.
