Ingredients

 3/4 lb. lamb shoulder or shank, cut into 1" cubes
 Onion1/2 Small, thinly sliced
 Oregano1/2 Teaspoon
 Pineapple chunks1/2 Cup (16 tbs)
 1/2 large onion, cut in 1" pieces
 1 firm tomato, cut in 1" wedges
 Vegetable oil1 Tablespoon
 3/4 tsp. salt 1/8 tsp. coarsely ground pepper
 3/4 tsp. salt 1/8 tsp. coarsely ground pepper

Directions

Place lamb cubes in a bowl.
Tuck in onion slices.
Add seasonings.
Refrigerate 1 to 2 hr.
Alternate meat cubes, chunks of pineapple, onion, and tomato on metal skewers.
Roll in vegetable oil.
Broil 3" from heat, about 15 to 20 min.
Turn as meats and vegetables brown.
