Lamb Shanks With Dried Fruits Recipe

4 lamb shanks
 
Salt and pepper
 
Flour
 
2 tablespoons butter
 
2 large cloves garlic, minced
 
2 cups mixed dried fruits: peaches, apricots, pears and prunes
 
1/2 cup sugar
 
1 teaspoon cinnamon
 
1/2 teaspoon allspice
 
1/2 teaspoon ground cloves
 
1/4 cup tarragon vinegar
 
31/2 cups water

Directions

Dust the lamb shanks with salt, pepper and flour.
Brown with the garlic in the butter.
Put in a large casserole with the dried fruits, sugar, cinnamqn, allspice, cloves, vinegar and water.
Add more water if necessary to keep moist.
Cover tightly and bake at 350° about 3 hours or until the lamb shanks are tender.
