Ingredients
4 loins of lamb, boned
1/4 Cup (60 ml) butter
1 onion, chopped
30 chopped hazelnuts
1 carrot, julienned
Salt and pepper
1 garlic clove, finely chopped
Pinch of thyme
Green peppercorn sauce
2 tbsp (30 ml) chopped parsley
Directions
– Preheat oven to 375 °F (190 °C).
– Open the boned loins of lamb.
– In a skillet, melt half the butter, cook onion, hazelnuts, carrot and garlic; season with salt, pepper, and thyme and cook for 3 minutes.
– Spread the meat with the stuffing, roll and tie.
– Using the same skillet, melt remaining butter and brown the meat.
– Cook in oven for approximately 15 minutes then let stand for 5 minutes before carving.
– Place loins in a serving dish, coat with green peppercorn sauce, sprinkle with parsley and serve.
