2 tbsp butter
1 large onion, chopped
1/2 cup mushrooms, sliced
1/4 tsp dry mustard
1 9 inch pie crust
1 1/2 cups lamb, cooked, diced
1/2 cup Parmesan cheese, grated
8 oz cream cheese, softened
1 cup milk
3 eggs, beaten
1 tsp salt
1/4 tsp pepper
1/8 tsp ground nutmeg
4 tomatoes, sliced
Directions
Preheat oven to 400 °F (205 °C.
In a frying pan, melt butter.
Lightly cook onion, mushrooms and dry mustard.
Set aside.
Place meat in pie crust.
Set aside.
In a bowl, mix both cheeses.
Add milk, eggs, salt, pepper and nutmeg.
Fold in onion anc mushroom mixture.
Gently pour into pie crust.
Cover with tomato slices.
Bake in oven 10 minutes.
Lower oven temperature to 350 °F (175 °c).
Continue cooking 25 minutes.
Remove quiche from oven.
