Lamb Pineapple Kabobs Recipe
These Lamb Pineapple Kabobs taste fantastic ! Alternately arrange fruit and meat on skewers and marinade with soy sauce, pineapple juice, garlic and pepper. Try these Lamb Pineapple Kabobs and let me know if you like them.
Ingredients
1 1/2 pounds boneless lamb shoulder or leg, cut in 1 1/4-inch cubes
2 cans (8 1/4 ounces each) pineapple chunks in syrup, drained (reserve 1/2 cup syrup)
1/2 cup soy sauce
1/4 cup lemon juice
2 cloves garlic, minced
1/2 teaspoon pepper
Cooked rice

Directions
1. Put lamb cubes into a large shallow dish.
2. Reserve pineapple chunks. Mix 1/2 cup pineapple syrup, soy sauce, lemon juice, garlic and pepper. Pour over meat. Refrigerate covered several hours or overnight; turn meat occasionally.
3. Remove meat from marinade; reserve marinade for brushing kabobs during cooking.
4. Alternately arrange meat pieces and the reserved pineapple chunks on 8 (8-inch) bamboo skewers; brush with marinade. Arrange kabobs in an 8-inch square glass baking dish. Cover with waxed paper.
5. Cook in microwave oven 11 to 12 minutes at Medium-High, or until meat is done as desired; rotate dish one-quarter turn twice and rearrange kabobs and brush with marinade twice.
