Lamb N Potato Cakes Recipe
Ingredients
| 1 medium-size onion, finely chopped | ||
| Bacon drippings | ||
| 2 cups finely chopped cold cooked lamb | ||
| 3 medium-size potatoes, cooked, peeled and finely chopped | ||
| Egg | 1 | |
| Catsup | 1 Tablespoon | |
| 1 tablespoon bottled gravy coloring | ||
Directions
1. Saute onion in 1 tablespoon drippings in large skillet 2 to 3 minutes, or just until softened.
2. Stir in lamb, potatoes, egg and catsup. Season with salt and pepper, if needed. Mix well.
3. Shape into 8 equal-size patties; brush each lightly on both sides with gravy coloring.
4. Saute in same skillet, adding more drippings as needed, until heated through and well browned.
