Lamb Molls With Apricot Sauce Recipe

Ingredients

 Sweet potatoes1 Cup (16 tbs), mashed
 Dried apricots1/4 Cup (16 tbs), chopped
 Molasses1 Tablespoon
 8 thin slices of cooked roast lamb
 1 1/2 cups apricot juice
 Lemon juice1 Tablespoon (Sauce)
 4 tsp comstarch
 Salt1/2 Teaspoon (Sauce)
 Pinch of ginger
 Golden Raisins1/2 Cup (16 tbs) (Sauce)
 Butter/Margarine2 Tablespoon (Sauce)

Directions

Preheat oven to 350 °F (175 °C).
In a small bowl, combine stuffing ingredients.
Divide stuffing among lamb slices.
Roll.
Secure with a wooden toothpick.
Transfer lamb rolls to a cookie sheet.
Cook in oven 15 minutes.
Meanwhile, in a saucepan, blend sauce ingredients.
Over low heat, while stirring, cook until sauce thickens.
Add raisins and butter.
Stir until butter melts.
Pour apricot sauce over lamb rolls.
