2 lamb loins, boned
3 tbsp bread crumbs
3 tbsp Parmesan cheese, grated
2 garlic cloves, chopped
1 tbsp parsley, chopped
3 tbsp olive oil
3 tbsp tomato paste
1 cup lamb or beef broth

Directions
Cut lamb loins into 4 pieces.
Flatten each to a medallion shape.
Mix bread crumbs, Parmesan, garlic and parsley.
Dredge medallions with mixture, pressing down so breading will stick to meat.
In a skillet, heat oil.
Lightly brown medallions 2 minutes each side.
Reduce heat.
Continue cooking 6 minutes.
Mix in tomato paste.
Pour lamb or beef stock into skillet.
Over high heat, bring to a boil.
Let liquid reduce by half.
Season with salt and pepper.
Remove from heat.
Let stand 3 minutes.
Garnish with fresh parsley.
