Lamb Meatballs With Tomato Mint Dip Recipe
Lamb meatballs with tomato mint dip is a lovely appetizer that can also be served as a side in meals. Made with ground lamb combined with bulger with seasonings and parsley for flavor, the meatballs are baked and served with a minted tomato sauce on the side.
Ingredients
3 cups cold water
1 1/2 cups fine bulgur
2 pounds ground American lamb
1 cup minced fresh parsley
2 medium onions, minced
1 tablespoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 to 1/2 teaspoon ground red pepper (to taste)
1 piece fresh ginger, about 2 X 1-inch, peeled and minced
1 cup ice water
Directions
In medium bowl, pour cold water over bulgur to cover; let soak about 10 minutes.
Drain and place in fine-meshed strainer; squeeze out water.
In large bowl, knead lamb with parsley, onions, seasonings and ginger.
Add bulgur; knead well.
Add ice water to keep mixture smooth.
Shape teaspoonfuls meat mixture into bite-sized meatballs.
Place on ungreased jelly-roll pan.
Bake in preheated 375°F oven 20 minutes.
Place meatballs in serving bowl; keep warm.
