Ingredients
1 pound lean ground lamb
1/4 cup fresh bread crumbs
1 large egg, separated
2 cloves garlic, minced
2 tablespoons minced fresh mint or 2 teaspoons mint flakes, crumbled
2 tablespoons minced parsley
1/4 teaspoon ground cinnamon
1/4 teaspoon each salt and black pepper
2 cups Chicken Stock or low-sodium chicken broth
1/2 cup plain low-fat yogurt
1 tablespoon cornstarch
2 tablespoons lemon juice, or to taste
Minced fresh mint (optional garnish)
Directions
1 ln a medium-size bowl, combine the lamb, bread crumbs, eggwhite, garlic, mint, parsley, cinnamon, salt, and pepper.
Using your hands, form the mixture into 1 -inch meatballs.
2 In a medium-size saucepan, bring the stock to a boil.
Add the meatballs, lower the heat, and simmer, covered, for 20 minutes or until tender.
With a slotted spoon, transfer the meatballs to a plate and cover with aluminum foil to keep them warm.
Set the stock aside.
3 In a medium-size bowl, whisk the yogurt, cornstarch, and egg yolk until well combined.
Add the hot stock in a stream, continuing to whisk.
Transferthe yogurt mixture to the saucepan and simmer over low heat, stirring, for 2 minutes or until the sauce is slightly thickened.
Add the lemon juice.
Strain the sauce over the meatballs.
Garnish with the mint.
