Lamb Kofta Recipe
Ingredients
| Onion | 3 Tablespoon, grated | |
| Snipped parsley | 2 Tablespoon | |
| Cilantro | 2 Tablespoon, snipped | |
| Ground cumin | 1/2 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Ground red pepper | 1/4 Teaspoon | |
| 1 lb. ground lamb or a mixture of ground lamb and ground beef | ||
| Chicory leaves | 4 | |
Directions
1. In a medium mixing bowl combine the onion, parsley, snipped cilantro, cumin, cinnamon, salt, and red pepper. Add meat and mix well. Shape about 1/4 cup of the mixture into an oval about 3/4 inch thick; repeat to make 8 patties total.
2. Grill patties on the rack of an uncovered grill directly over medium coals for 10 to 12 minutes or till no pink remains, turning once. (Or, to broil, place patties on the unheated rack of a broiler pan. Broil patties 3 to 4 inches from the heat for 10 to 12 minutes or till no pink remains, turning once.)
3. To serve, if desired, place on a bed of cucumber slices, garnish with chicory, and serve with grilled lemon wedges.
