1 cup (240 ml) plain low-fat yogurt
2 tbs (30 ml) Dijon mustard
3 cloves garlic, minced

Directions
Mix fresh mint, yogurt, mustard, garlic, lemon juice, salt and pepper in a medium-size bowl.
Add lamb pieces and refrigerate overnight.
Preheat broiler or barbecue.
Thread lamb with tomatoes and zucchini onto skewers, reserving marinade.
Place in broiler or on grill.
Cook until desired doneness, turning and basting with marinade, approximately 7-10 minutes.
