Lamb Fries in Bread Crumbs Recipe

Ingredients
| 10 oz. lamb's fries, slit, soaked, peeled, parboiled, halved and cut into wedges the shape of orange segments | ||
| 3 eggs, lightly beaten | ||
| Dry bread crumbs | 3/4 Cup (16 tbs) | |
| Lard | 7 Tablespoon | |
| Butter | 8 Tablespoon | |
| 4 slices firm-textured white bread, crusts removed | ||
| Lemons | 2 , quartered | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Season the beaten eggs with salt and pepper and dip the fries into them.
Then coat the fries with the bread crumbs.
Dip them in the eggs again.
Melt the lard and, when it is hot, add the fries and fry them until they are golden brown all over about 15 minutes.
Drain the fries and keep them hot.
In a separate skillet, melt 4 tablespoons [60 ml.] of the butter and fry the bread in it until the slices are golden brown on both sides adding more butter to the skillet if necessary.
Cut the fried bread into triangles and arrange the triangles around a serving dish.
Pile the fries in the middle and squeeze the lemons over them before serving.
