Easy Lamb Curry Recipe
This lamb curry is a fruited meat curry. Spicy and savory, it is cooked in chicken broth and thickened with cream. Flavored with ginger and curry powder, this lamb curry can be served with rice or dinner breads or rolls.
Ingredients
| Onions | 1 Cup (16 tbs), diced | |
| 1 large tart cooking apple, cored and diced | ||
| Curry powder | 2 Teaspoon | |
| Ground ginger | 1/4 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| Margarine | 3 Tablespoon | |
| All purpose flour | 3 Tablespoon | |
| Chicken broth | 1 Can (10oz) | |
| Heavy cream | 1/4 Cup (16 tbs) | |
| 3 1/2 cups diced cooked lamb or other cooked meat | ||
Directions
In large saucepan, over medium heat, cook onions, apple, curry powder, ginger and pepper in margarine until tender, about 5 minutes.
Blend in flour; gradually stir in chicken broth until smooth.
Cook and stir until sauce is thickened and begins to boil.
Stir in cream and lamb; cook until heated through.
